I own both of the rifles you are talking about...
I own both of the rifles you are talking about (CZ in 17 h and 2 Remington 700s in 17 fireball). I love all three!!!! Due to the size of game you are hunting I would have to say go with the fireball....

and I love mine. Near identical with the exception of having a Weaver 40/44 6.5-20x44 on it. I've pulled some pretty good shots with mine....

Just buy a factory fireball 700....
You'll be a lot more satisfied with the end product. I converted a 243 700 to a 17 fireball. I bought a factory 223 bolt off of ebay, a factory 17 fireball barrel off of here as well as a factory mag...
